Herbed Tomato Bisque

There’s a story behind my Herbed Tomato Bisque recipe. Years ago dear friends of mine owned a tearoom. It was the loveliest of tearooms. Magnolia and Ivy. They shared their recipe for Tomato Dill Bisque with me, and it’s been a family favorite ever since. I’ve tweaked it a little and changed the name. People tend to turn their nose up at a tomato soup with dill in it, but this soup…is…the…best.

THE MOST REQUESTED BLISS RECIPE

When we owned a restaurant, we had requests for recipes often. The most requested recipe was for our Herbed Tomato Bisque. It was served every Friday, sometimes Saturday and was hands-down the overall favorite. There are many recipes for Tomato Basil Soup, but this is not one of them. You may be surprised to hear that there is absolutely no basil in this soup. Zero.

Important: Taste and Adjust if it Isn’t Amazing. How does it taste? It should be herbaceous. Creamy. Tomato should come through, but it shouldn’t be acidic. The honey is a key to this bisque.

Herbed Tomato Bisque Recipe

This is such a great soup. It's easy to make and good for you, too!

Ingredients

  • 1 stick butter
  • ¼ cup olive oil
  • 1 cup chopped yellow onions
  • 1 tablespoon dried dill weed
  • 1 tablespoon ground dill seed
  • 1 tablespoon oregano
  • 1 tablespoon garlic granules
  • 1 tablespoon salt (or more to taste)
  • 2 teaspoons pepper
  • 6 cans diced tomatoes
  • 1½ quarts chicken broth
  • 1 cup heavy cream
  • 1 cup half and half
  • ½-1 cup honey
  • 2-4 tablespoons chopped fresh dill (or to taste)
  • ½ cup of unbleached all-purpose flour or ¼ cup arrowroot mixed with 1 cup of the half and half if you want a gluten-free version.

Instructions

  1. Saute onions and dried spices, salt and pepper in the butter and olive oil until the onions are translucent. Add flour, if using flour, and cook for 2-3 minutes.
  2. Add tomatoes and broth.
  3. Bring to a boil, and then let simmer about 20 minutes.
  4. Blend with a stick (hand) blender until very, very smooth. Silky smooth. You can also use a blender for this step for a bit smoother bisque.
  5. Add the cream, half and half, honey, fresh dill, and arrowroot, if using arrowroot.
  6. Let simmer 5 more minutes for the soup to heat through.
  7. IMPORTANT: Taste the soup. It should be creamy, a little sweet to your liking, salty enough, but not too salty, and the herbs should shine. If it doesn't taste amazing, adjust the ingredients a little at a time. You can do it!
